Rum, the more exotic spirit, originating from the Caribbean and Latin American countries, tends to be fermented and distilled from molasses (a by-product of sugar-cane) or directly from sugarcane juices. Popular manufacturing countries include Dominican Republic, Cuba, Barbados, Trinidad and Tobago, and for such nations, Rum forms a big part of their culture as people drink it in cocktails as well as a "secret" ingredient for cooking. Think Pina Colada's and Jerk Chicken...simply delicious.

White Rum retains transparency because they are bottled straight after distillation whereas dark rums get their colour and flavour from an ageing process. General rule of thumb for Rum...the darker it is the more older and mature it is.
